Take a tropical vacation this Easter with @TestKitchen Mango Coconut Carrot Cake frosted with mango cream cheese frosting. I decorated the cake with an edible Easter Bunny and carrots made with molding chocolate that I tinted into various colours. My cake turned out a bit too dense to my liking but the tropical flavour is a nice twist to the traditional carrot cake. Happy Easter!

Good to know that I can still frost a cake perfectly evenly. Phew.
